Ingredients for Cobbler:

  • 1 cup, plus 3 tablespoons all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3/4 cup granulated sugar

  • 1 teaspoon cinnamon

  • ¼ teaspoon ground ginger

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon cloves

  • 1/2 cup pumpkin puree

  • 1/4 cup milk

  • 1/2 cup melted butter

  • 1 1/2 teaspoons vanilla extract

For the crumble topping:

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1/4 cup chopped toasted pecans

  • 1 1/2 cups boiling hot water




  1.  Preheat oven to 350 degrees.
  2. In a medium sized bowl, mix flour, baking powder, salt, sugar, and all the spices. Set aside to use later.

  3. In a small bowl, stir pumpkin, milk, melted butter, and vanilla together until smooth and creamy. Pour wet ingredients into dry ingredients and mix to create a thick batter. Pour into a deep 8-inch greased casserole dish.

  4. In a skillet, add ¼ cup of butter. Once the butter is melted, add in the pecans. Allow them to toast for 3-4 minutes. Then sprinkle brown sugar and sugar on top. Stir together to ensure pecans are evenly coated. Remove from heat. Spread over the top of the batter evenly. Without stirring, pour hot water over the top, and bake for 40 minutes or once the middle is completely set. Cool 10 minutes before serving. Serve warm with vanilla ice cream and warm toasted pecan!
