There’s nothing like coming home to a fragrant, hearty dinner you don’t even remember putting up before leaving the house in the morning. Here’s our favorite set it and forget it chicken dish.

Ingredients

Serves 4

  • 2 large boneless, skinless chicken breasts

  • Salt, pepper and Italian seasoning to taste

  • 1/4 cup red cooking wine (optional)

  • 1 small white onion, sliced

  • 1 green bell pepper, seeded and sliced

  • 1 red bell pepper, seeded and sliced

  • 28 oz. can crushed tomatoes

Directions

  1. Place the chicken breasts in the base of the slow cooker and season with Italian seasoning, salt and pepper.

  2. Add 1/4 cup red cooking wine around the chicken (optional).

  3. Add the sliced onion and bell peppers over the top of the chicken.

  4. Pour the crushed tomatoes over the top and add Italian seasoning and a little more salt and pepper.

  5. Set slow cooker on low and cook for 8 hours.

Serve with bread or rice (optional).
